Chicken Salad…Salad – Test Kitchen

In an attempt to break away from my fried regulars and eat better during the week, I experimented with making chicken salad  but using less mayo and adding humus to the mix. I used roasted chicken from the previous day but rotissorie would work too.

2 cups of chopped cooked chicken
1/3 cup chopped celery
1/4 cup chopped onion
2  tbls mayo
2 tbls humus ( Sabra roasted red pepper)
3 tbls apple cider vinegar
1 tbl olive oil
1/2 tsp garlic salt
1/4 tsp black pepper
1/4 tsp cumin
lettuce mix
olive oil
balsamic vinegar

Mix first 10 ingredients well in a bowl.

Place lettuce on a plate and drizzle with a lime and olive oil. Top with chicken salad and top the whole salad with a drizzle of balsamic vinegar.

    I like the idea of mixing in a less caloric binder for the chicken salad than mayo. The hummus sounds like a great idea. What about low fat greek yogurt? I have Rocco Dispirito’s book on re-inventing traditional recipes to make them healthier and low fat greek yogurt seems to stand in often for mayo. How did you like your creation?

      Hey Pat,
      Thanks for the comments, greek yogurt sounds like a good idea too. We have started using humus in sandwiches so figured it would work here too. I thought it worked out well and also like the flavor the apple cider vinegar gives it.
