Easy Cast Iron Skillet Pizza


We were watching the Food Network last week and saw someone cook a pizza in a cast iron skillet. Ever since then Serena has been hounding me to try it in ours. A couple of days ago we decided to give it a shot. You may be lucky enough to live near a good pizza place that will sell you dough or at least have a grocery store that sells a halfway decent dough, we are not that lucky. Although we wanted to make our own pizza, after a long day neither of us wanted to wade into dough making but did not want to use a Bobali crust either. An easy alternative is to pick up Fleischmann’s® Simply Homemade® Country White or Italian Herb No Knead Bread Mix. Everything you need to make dough is in the package except for the agua.


Pizza Crust

Yield: 1 (14.5 inch deep dish crust) or split the dough to make pizza in smaller skillets)


1 package Fleischmann’s® Simply Homemade® Country White No Knead Bread Mix
OR Fleischmann’s® Simply Homemade® Italian Herb No Knead Bread Mix (bread mix includes yeast, sugar and flour mix)
3/4 cup warm water (105˚ to 115˚F)
2 tablespoons olive oil

Combine water with yeast and sugar packets in a large mixing bowl. Let sit for 3-5 minutes. Stir in oil and bread mix. Place dough in a well oiled bowl and shape into a ball. Cover and let dough rest for at least 10 minutes.


The Pizza

2 Tbls melted butter

1 Tbl olive oil

Your favorite toppings. I used:

hot peppers, salami, bacon, mozzarella cheese, red sauce (click here for a good sauce recipe)

Pour butter and oil into cast iron skillet and spread over skillet. Using your hands, pat dough into a greased 14-inch cast iron skillet, forming a rim around the edge.

If you have time, let dough rise again for 5-10 minutes. Top pizza crust with your favorite toppings. Bake on lowest rack in a preheated 650˚F oven for 12 to 15 minutes.
