Red Velvet Ice Cream Brown Sugar Waffle Sandwich


The night before I created this tastey beast we had eaten out at Geer Street Garden in downtown Durham. For dessert we had their ice cream sandwich that was constructed with home-made chocolate chip cookies and some delicious vanilla ice cream. Great dishes always seem to stay in my head motivate me to try something new with what I have in the fridge. So the next night when I had a hankering for an ice cream sandwich these are the instruments I had on hand to make it happen

eggo waffle

butter

brown sugar

red velvet ice cream

Add butter to a skillet on high heat and add brown sugar. Add a waffle to the skillet and move the waffle around the skillet to absorb the butter and brown sugar. Do this on both sides untill the waffle has a nice brown.

Remove waffle from heat and cut in half. Place a scoup of red velvet cake ice cream between the waffles and enjoy.
