Caribbean Coleslaw


This is a follow-up to my previous post and can used to top a pulled pork sandwich or eaten as a side

INGREDIENTS

(adapted from “A Taste of Florida and the Keys”)

3 cups shredded green cabbage

3 cups shredded red cabbage

1 cup grated carrot

1/4 cup raisins

2 large oranges, peeled, sections and diced

3/4 cup mayonnaise

1/4 cup key lime or lime juice

1/2 teaspoon curry powder, toasted in a dry skillet for a minute

salt

pepper

Toss together green and red cabbage with carrot in a large non-reactive bowl. Fold in raisins and oranges. Set aside.

Mix mayonnaise with lime juice and curry powder. Fold into cabbage mixture. Season to taste with salt and pepper.
